Variations

- Almond or cashew butter can easily be used in place of the peanut butter and don’t forget to add chopped dried fruit like cranberries, raisins, or cherries.
How to Make Energy Balls
- Add pecans and cranberries to a food processor. Pulse just until slightly chopped.
- Add all remaining ingredients (per recipe below). Pulse until the mixture is combined and holds together.
- Scoop energy balls onto a prepared baking sheet and chill before serving.
PRO TIP: Lightly toast shredded nuts (or coconut if you add it in) in a dry pan until they are barely browned. This burns off the extra oil and makes them crunchy and sweet!
How to Store
Store energy balls in the refrigerator in a tightly sealed container and they will last about 7 days. Or, wrap them individually in foil or plastic wrap so they are ready to go!
Frozen energy balls are a great snack on a hot day or after a heavy workout! Freeze them on a baking sheet before putting them in a zippered bag (this keeps them from sticking together). They’ll stay fresh for up to 8 weeks in the freezer.

Easy No Bake Energy Balls
These tasty Energy Balls are as easy to make as they are delicious and will keep you going all day long!

Place cranberries and pecans in the food processor. Pulse a couple of times to break them up.

Add remaining ingredients (except chocolate chips if using) and pulse in the food processor until it holds together and thickens.

Line a baking sheet with parchment paper. Mix in chocolate chips if using.

Scoop the mixture into 12 balls with a cookie scoop. Roll smooth and place on the prepared pan.

Chill 2 hours before serving.
Different brands of peanut butter can have different consistencies, if needed add a few extra oats to reach desired consistency.
