I was browsing the Instagram explore feed when I stumbled upon a banana bread recipe. I love bananas and bread that’s why I decided to click on the photo and check the recipe. To my surprise, it’s not the regular banana bread that’s perfect for afternoon tea or coffee. It’s vegan! Have you tried this kind of food yet? According to healthline.com, Veganism is currently defined as a way of living that attempts to exclude all forms of animal exploitation and cruelty, be it from food, clothing, or any other purpose.
Therefore, the simplest explanation is that vegan food simply equates to plant-based. In order for you to cook vegan food, all the ingredients must be animal-free, and using plants like fruits, vegetables including nuts, seeds, whole grains, and beans to name a few is what all you need. This vegan banana bread is so easy to make and made up of five ingredients. It’s filling because of the whole grains used instead of the usual bread flour. Before I list down the ingredients and instructions on how to cook this version, let me share that I have no oven at home that’s why I used my air fryer in baking this bread. As for the original ingredients, I omitted the walnuts and used the default oatmeal instead of the oatmeal flour. The result of my version is a chunky, oatmeal cookie-like texture with a moist center because in using an air fryer, I have to cook the top first then flip it over then cook the bottom part. But if you prefer a banana bread texture, use your oven and blender or food processor to make oat flour. Let’s now jump to the ingredients and procedure 🙂

Chunky Monkey Vegan Banana Bread
ingredients:
4 ripe bananas
170 ml plant-based milk. I used Soy Fresh Low-Sugar Soy Milk
350 g oats. I used instant oats
1 tsp cinnamon
15 g baking powder
50 g walnuts (optional)

procedure:
1. Chop bananas into small pieces. Put in a bowl and mash with a fork until there’s no large piece anymore.
2. Add the plant milk and cinnamon. Mix everything together.
If you have a blender, a hand mixer, or a food processor, mix the oats until you have oat flour. If none, proceed to number three.
3. Add the oats and baking powder. Mix all the ingredients together.
4. Put the mixture in a baking pan if you are planning to bake it in the oven or straight into the air fryer like what I did.
5. If you are going to add walnuts, chop them into half and put them on the top of the dough.
6. Place in a preheated oven and bake it for about 60 minutes at 180 C.
7. Serve and enjoy.

My version may taste bland if you are not used to eating sugar-free or sugar-less food. The only sweetener in the ingredients is the ripe bananas. You may use stevia if you prefer a little sweet or you may spread peanut butter or your favorite spread to taste. It’s perfect for coffee and tea and can be addicting especially if you love banana bread but on a strict diet or caloric deficit. It’s filling since oats is a whole grain that’s rich in fiber. My stomach feels full after eating a slice of this bread. The recipe is easy to follow and you may tweak it according to your taste and preference.
