Made In’s blue carbon steel skillet is the stuff of legend! And since its launch way back in 2019, the pan has quickly become a favorite with several Kitchn editors as well as pro chefs, thanks to the unique carbon steel material that’s sturdier yet lighter than cast iron, equipped to handle heat up to 1200 degrees Fahrenheit, and suitable for most stovetops as well as ovens. The only hitch? Like cast iron, carbon steel pans need to be seasoned before their first use. But what if we told you Made In just released a super-limited version of its carbon steel skillet that’s good to go right out of the box?
Yes, Made In will do all the hard work of seasoning the pan for you before delivering it right to your doorstep. Available in the 8-, 10- and 12-inch size options, the seasoned pan “is perfect for those who are confused or find the thought of doing the initial seasoning a bit daunting … or just want to save time,” adds Chip Malt, co-founder and CEO of Made In.
As for seasoning the pan itself, Made In first layers the pan with American flax-seed oil and then bakes it at high heat for an extended period of time. According to Chip, this creates a glass-like surface that gets more stick-resistance over time. Translation: This simply means that you can sear meats and char vegetables even at very high temperatures, and still expect perfect results that will slide right off the pan with ease!
If you’re new to Made In’s skillets and wondering if they’re worth it, according to Food Editor Meghan Splawn, they can “outperform your standard skillet in many ways.” Meghan spent over a year testing the pan, using it to prep everything from frittatas to vegetables, and even popped it in the oven to roast a few chicken thighs and noted that the pan “makes you feel like a pro chef without the price tag of stainless steel and without the hefty weight of cast iron.” And now that you have the option to bring it home seasoned, it’s even better!
Currently, Made In is only releasing a limited number of seasoned pans, and once they sell out, they’ll decide to bring back the option full-time. So if you have your heart set on their beautiful blue carbon skillet, now’s the time to act!
